  Once upon a time...

  • Dosage: 5 gr/L
  • Vinification – 100% oak barrels 
  • Nose:  first nose is open, aromatic, stewed fruits, liquorice, honey, dried fruits, butter croissants - on the second nose bourbon vanilla and melted butter, nougat, spices 
  • Mouth: attack tender with density, mid-mouth is wide and fleshy, then a warm feeling emerges, cashmere texture. 15s tangy, oily, chalky finish

 A true 'reflection' of Caillez-Lemaire’s terroir 


  • Dosage:  5 g/l  
  • Vinification –  25% oak barrels / 75% stainless steel vat 
  • Aromas: The aromas are mainly fruity, with notes of citrus, white flowers and bread dough. The attack is gentle and bubbly, the finish is long with a slight acidity. 
  • Food pairing: cheesy pastry for entrée, gravlax salmon, scallops, white meat or a vegetable risotto.

Cuvée Deux A

 A conviviality, a personality and duality 


  • Dosage –  6 g/l  
  • Vinification –  6% oak barrels / 94% Stainless steel vat 
  • The nose:   The initial scent of cocoa gives way to the complexity of candied citrus fruits with praline nuances. 
  • The mouth:   On the palate, enjoy a generous mouth and balanced richness of candied apricots, culminating in a velvety vanilla finish carried by an interesting tension 
  • Food pairing: Ideal as an aperitif and continued throughout a meal (white meat and vegetarian dishes) or paired with soft cheeses like Camembert.

The 'Jewel' of the Fournaise Dubois range


  • Pressed with pneumatic membrane - using juice produced solely from first press (tête de cuvée)

Brut NV Rosé

 The Rosé’s kiss of biscuit bliss… 



• Dosage: 6.5 gr/l – Ageing 3 years on lees

• Vinification: 100% stainless steel. Malolactic fermentation. 35% Pinot Meunier , 30% Pinot Noir and 20% Chardonnay  and 15% AOC Coteaux Champenois wine

• Eye: Pink and salmon colour is enhanced by a delicate bead of foam revealing fine light bubbles

• Nose: Great aromatic richness, developing aromas of red fruits and black fruits 

• Mouth: A beautiful freshness leaving a pleasant sensation on the palate, mingling with biscuity aromas. 

• Food Pairing: Very pleasant as an aperitif, this Champagne will also accompany soft cow-milk cheese like camembert/brie and all desserts made with red fruits.

Cuvée L’Indigène'

 The terroir’s gift of indigenous vines… 

  

• Dosage: 5 gr/l – Ageing 6 years on lees

• Vinification: 100% Stainless steel vat – No malolactic fermentation – No filtration

• 100% Pinot Meunier 

• Eye: Intense shine, fine bubbles, a golden colour with copper highlights

• Nose: A gourmet nose and generous expressing delicate notes of stone fruit like peach and apricot.

• Mouth: Very fruity and round. Reveals harmonious notes of stone fruit, citrus and sweet almond.

• Food Pairing: Accompanies dishes with balanced flavours like creamy chicken breast, a vegetarian salad with herbs and walnut or truffle oil.

Cyries Millésimé 2018

 'Cyries': the anagram of 'Riceys'


  • Dosage – Extra Brut - 5.3 g/L  
  • Vinification – 50% Pinot Noir Stainless steel / 50% Chardonnay matured on the lees in 600L demi-muid (oak barrel)
  • Malolactic fermentation
  • Nose:  A very fine first nose with delicate notes of mandarins followed by developing notes of brioche. A second nose very rich leaning towards strawberry notes
  • Mouth: The mouth is lively, straightforward and frank. An interesting tension resolves with fresh minty notes. The champagne displays great finesse and longevity in the mouth

Virginie Bergeronneau | Montagne de Reims

Cuvée Ernestine

 Modern whispers of an ancestral legacy 


• Dosage: 0 gr/l – Ageing 19 months on lees

• Vinification: 60% Pinot Meunier, 30% Pinot Noir, 10% Chardonnay 100% Stainless steel vat – Malolactic fermentation 

• Eye: fine bubbles, a golden colour and a nice bright reflection

• Nose: Elegant aromas of pome fruits like apple and pear mingling with delicate notes of white flowers and acacia.

• Mouth: A lively mouth with a frank attack. Well balanced, round and expresses a great freshness which opens up on the palate.

• Food Pairing: Perfect for aperitif or to accompany oysters, fish and sashimi or white meats.
